Berry and Banana Flapjack


I made my berry and banana flapjack recently for a local playgroup that I go along to with my daughter. It was my turn to get the snacks for roughly 25 kids so I though I'd try something new and take them some homemade flapjack - it went down well with both kids and mum's and dads who were there.

Obviously being a playgroup I omitted the nuts/nut butter but here is the version that I usually make for home (nuts included!)

4 really ripe bananas

2 cups of oats

1/3 of a cup of seeds (flax, chia, pumpkin, sunflower - whichever or a mix)

1/2 cup of cranberries

2 tbs maple syrup

1/3 cup of butter or coconut oil

2 tbs nut butter

1 handful of mixed berries- raspberry/blueberry

Topping: mixed seeds, some more berries to dot over, flaked almonds

Preheat oven to 180, line a small baking tray with parchment. Melt butter, nut butter and maple syrup together. Once this has melted add oats, dried fruit, seeds and mix well. Add mashed bananas and mix. Add berries and mix gently. Add to tray and flatten down. Dot over toppings and backs for about 20 mins until golden. Leave to cool in tray then lift out and cut.
