Apple, cinnamon and walnut oat bars


Apple, cinnamon and walnut oat bars made with dates. Ideal for kids lunch boxes or a quick snack. Roast 2 cups of oats, 1 cup of walnuts and 1 cup of mixed seeds in the oven for 10 mins. Put this into a food processor with 1.5 cups of pitted dates - the gooier (is that a word?) the better, add 1.5 tsp of cinnamon and whizz together until thoroughly mixed. Add 1 chopped Apple and continue to mix until it all starts sticking together. You may have to scrape the sides a few times. Flatten down the mixture in a appropriate sized baking tray, pressing and smoothing until flat. Cook in the oven at 180 for about 20 mins. Leave to cool in the tray for a while before cutting into slices and cooling completely. Enjoy X
